Experimental Batch: Finish Sahti
Ore Dock's take on a traditional finish ale, featuring Juniper tips and boughs harvested here in the northwoods.  Sahti is a style of ale nearly 500 years old, that was kept alive by homebrewers in Finland and is again produced by some regional breweries there.   It was originally an ale of multi-grain composition.  The sweet wort was filtered through a bed of Juniper boughs directly into a fermentation vessel where baker's yeast was added for fermentation.  
Ore Dock's version incorporates the traditional methods of mash filtration through boughs(wood and all) and a multigrain composition (Barley, Oats, Rye), but was boiled like a typical ale and fermented with our characterful house Belgian ale strain.  Juniper tips, the youngest and most aromatic part of the tree, were added post boil to impart the fresh cedar-like aroma.
